A Healthy Way To Survive Easter

On the calendar Easter is next Sunday, but by looking at any of the stores   Easter should have been shortly after Valentine’s Day. You can’t go through a store without those tempting treats popping out at you. Personally I’m a sucker for the Cadbury mini eggs, those things just call me! I’m sure you have an Easter treat that just screams your name.  Leave me a comment below and let me know what it is.  Oh my how could I forget that I’m also a SUCKER for peeps, you know the marshmallow ones. Yum, Yum give me some! Okay enough about the unhealthy, let’s talk about surviving Easter without packing on the pounds.

  • The Easter basket — instead of filling with candy add some boxes of raisins, cranberry or fruit. If you must do chocolate make it dark. Also add in some non-food treats. Like coloring books and puzzles.
  • Healthy Easter Menu
  • Main dish — Grilled Wild Salmon
  • Side dish — Roasted Veggies — love this one, it’s awesome
  • Desert lemon squares. They are fast, easy and delicious.

    Just Finished My Thanksgiving Menu

    This year my husband and I are cooking Thanksgiving for his family. This is the only way that I can relax and ease into the holiday.  I spent the weekend scouring my cookbooks and old Cooking Light magazines and this is what I’ve come up with.

    We are going to deep fry a turkey, I know I said FRIED. Well surprisingly deep fried turkey has only 25 more calories in 3.5 ounces than traditional roasted turkey and only 4 more grams of fat. Instead on focusing on those small caloric difference, I focusing on how much it’s going to free up my oven and not make my house feel like a sauna.  (more…)

    4 Thanksgiving Side Dishes

    So.. this morning at work we had a long discussion about Thanksgiving side dishes.  Here are some of the conclusions we came up with, but I would love to here your thoughts.

    1. Macaroni and cheese
      • should not contain onions, bread crumbs or Velveeta or American cheese!macroni and cheese 300x183 4 Thanksgiving Side Dishes
      • SHOULD contain — real cheese, milk, eggs and macaroni
    2. Sweet Potatoes
      • should not be sliced
      • SHOULD BE whipped or massed and baked in a pie, served as a side dish or if you need the extra fiber baked and served in the skin.
    3. Stuffing
      • this was a VERY controversial issue! Some were all about it, and some were just say no! I am of the school that stuffing is nothing but WET BREAD would you eat wet bread on any other day? Then why would you do it on Thanksgiving.
    4. Cranberry Saucecranberry sauce 300x300 4 Thanksgiving Side Dishes
      • another controversial one
        • some were all about the chunky cranberry sauce
        • others were shake it out of the can with can marks and all
        • me.. it’s NASTY  and just say no!
