I have an addiction

June 30, 2011 By: Kim Category: General Health, Nutrition, Recipe, Recipe, Snack Ideas

It started out really simple, I was looking for a new mid morning snack. I feelP6206376 300x225 I have an addiction into a rut and was looking to branch out.  Then we had a bit of a heat wave and I didn’t feel like cooking anything. It’s one of the few times a year that not having an air conditioner in New England is a bad thing.

Any who.. I started making smoothies and I can’t stop! My smoothies have taken on a life of their own.  My latest creation.

1 T powdered greens
1/2 c greek yogurt
1 kiwi peeled
1 t Udo’s oil
4 oz sweet potato (yes a sweet potato) — previously roasted
1/2 c water
handful ice cubes

Take all of this mix in a blender and blend until smooth.  The shake will be green, but will taste great.  If you feel that you need it, you make add 1/2 t honey to add some sweetness.

I Heart Peanut Butter

March 01, 2011 By: Kim Category: General Health, Nutrition

Today is National Peanut Butter Lover’s day. Personally, I have a love hate relationship with peanut. You hear people talk about gateway peanuts 300x200 I Heart Peanut Butterdrugs, well peanut butter is my gateway food. Once I have some I can’t stop I keep eating and eating and eating. When I’m competing I can’t have peanut butter in the house, it just won’t be pretty.  The good news I’m not alone.

Statistics show that Americans eat 3 pounds of peanuts/ year. Well I can beat that. Give me a bag of peanuts including the shells ,sorry those don’t slow me down, I can make my kitchen floor look like Fenway park.  I can keep eating and eating and eating.

Peanuts aren’t bad, for you they are a good fat, but they are CALORIE DENSE FAT BOMBS — Just one Tablespoon has 94 Calories and 8.9 grams of FAT so they should be eaten sparingly.  Many mistake nuts as a protein source, yes they contain protein, but the amount of fat in peanut butter counteracts and your body process it as a fat than as a protein.

Now I must go, just purchase a jar of Teddy’s and need to have a moment.

Did Someone Say Peanut Butter?

I know, I know there is this big peanut butter recall, but I love the stuff actually if there is a nut that can be whipped into smooth creamy awesomeness, then sign me up!

It’s National Peanut Brittle Day! So enjoy.

Peanut Brittle Protein Shake Recipe
Here’s a fun way to satisfy a junk food craving without sending your blood sugar sky-high with real peanut brittle. At the same time, you’ll be nourishing your body with lots of protein and healthy unsaturated fat.
Prep Time: 2 hours,
Ingredients:

* 2 scoops vanilla protein powder
* 2 tbsp sugar-free instant butterscotch pudding mix (dry)
* 1 tbsp natural peanut butter (smooth or chunky)
* 8 oz. water (or low-fat milk)
* 3-6 ice cubes

Preparation:
Add all ingredients to blender, whip, and serve. I like to use chunky peanut peanut butter and add it last so that it it stays chunky (like peanut brittle) but it tastes just as good with a smoother consistency.
